Sydney Summers Mojito – the best Strawberry & Mango Mojito!

Martine and I LOVE a good Mojito – So… for pre lunch or pre dinner drinks I thought I would share with you one of our favourite Mojito recipes!  a.k.a : Sydney Summer Mojito!

This is a little slice of summer heaven! 

This is the Mango Rum I used {from Dan Murphy’s} and when prepping the cocktails I put a few Strawberries and Mango on the bottom of the glass, then place the ice cubes on top – it will distribute the fruit throughout the cocktail.

A quick and easy Canapé :: on a wafer cracker top with a slither of Spiced Pear Paste {I buy Maggie Beer’s brand – located with the Speciality Cheeses} and then top the paste with slice Creamy Blue Vein Cheese and garnish with a leaf of continental parsley! Too easy.

SYDNEY SUMMER MOJITO – Strawberry & Mango Mojito… {makes 4 cocktails}

2 shots of Mango Rum per glass
1 large Mango – diced 
8-10 Strawberries – depending on size sliced
2 teaspoons of Brown Sugar per glass
3 Mint Leaves per glass
Mineral water to top up glasses
Ice Cubes

Place brown sugar in the bottom of the glass
Divide fruit between the glasses, pop in mint leaves
Then muddle to mix together and also to dissolve the sugar
Pop in the desired amount of ice – I like alot
Pour in Mango Rum – 2 shots per glass
Fill the glass with Mineral water.

You can turn this into a Caprioska by changing the Mango Rum to Mango Vodka
You can also replace the Strawberries and Mango with any of your favourite Summer Fruits!
